Green Kale & Coconut Soup
Ingredients:
1 Tbs Coconut oil
1 can of organic chickpeas, rinsed (try to choose a can with BPA-free lining)
1 zucchini, peeled, quartered and chopped
2 carrots, peeled and finely chopped
1 bunch of green kale, destemmed and finely chopped
2-3 garlic, minced
2 Tbsp curry powder
2 Tbsp turmeric
1 tsp cumin
1 tsp coriander
4 cups of water
1/3 cup uncooked lentils (I used golden, but any variety is good)
To make:
Heat coconut oil over medium heat. Add chickpeas, zucchini, carrots, kale, and garlic. Stir and cook for 5 minutes. Add curry powder, turmeric, cumin. and coriander. Stir and cook for 2 minutes. Add water and uncooked lentils. Bring to a brief boil, then immediately reduce heat to low and simmer, covered, for 20 minutes. Add coconut milk, bring back to simmer for another 5 minutes. Taste and adjust the seasoning as necessary. Also if soup feels too thick for your liking, you can add more water.
